Growing, preparing, maturing: rare vanillas from Madagascar brought to their full aromatic expression

ANTOKALY passionately grows and selects rare vanillas from Madagascar, including still little-known origins, which our maturation work brings to their full aromatic expression.

Varieties & terroirs

3 varieties, more than 10 aromatic references

Madagascar holds an exceptional biodiversity, living soils and a multitude of terroirs that give each vanilla a particular expression. ANTOKALY works this richness with precision, from the agroforestry plot to maturation, to reveal rare vanillas, expressive and suited to demanding uses.

Our mission is to bring the world the very best of Madagascar and to guide culinary professionals to the aromatic signature that matches their recipes.

Planifolia, Tahitensis, Pompona: each variety carries its own structure, texture and aromatic direction. These essential and complementary steps elevate this magnificent spice.

In our Malagasy rosewood chests, each lot is tended month after month. Wood, time and sensory evaluation together shape the ANTOKALY signature, respecting the individual expression of each vanilla. It is from this maturation that the depth professionals recognise in our vanillas is born.

The criteria the hand looks for on a sorting table are old. Plump, supple, even, with black and glossy seed, wrote a Paris druggist in 1694.

The art of maturation

Each recipe has its own aromatic signature and our different terroirs allow us to guide you even towards unexpected pairings.

At the origin

Two producers, one vision of vanilla

ANTOKALY was born from the meeting of Landrique BE and Yassine HAMMICHE PATEL, two producers gathered around the same collective in Antalaha, Madagascar.

Their shared passion: revealing rare lots from little-known terroirs and bringing them to an aromatic expression professionals can use with precision.
