V. Mille Tantely is a rare ANTOKALY Tahitensis lot grown in a humid tropical climate, warm and steady. Its maturation follows the craft of the Maison and delivers floral, aniseed and fruity aromas, with a naturally sweet finish and excellent length. A naturally oily vanilla, remarkably generous in seeds.
One of the rarest lots of the Maison, kept by some of our members for traditional rituals.
V. Mille Tantely belongs to the floral and airy family of ANTOKALY Tahitensis, a house of rare vanillas from Madagascar rooted in the SAVA. On this single territory, 3 varieties open the map and 10 lots fill it, each with the signature of its terroir. V. Mille Tantely takes its own from a humid tropical climate, warm and constant.

The name
Tribute to Valentin Mille
Tantely refers to its floral and naturally sweet aromas. V. Mille pays tribute to Valentin Mille, the pastry chef who has accompanied us from the beginning and now follows some of our rarest lots.
The terroir
Like all our productions, V. Mille Tantely is grown in agroforestry, under a humid tropical climate where temperature remains steady throughout the year. Rains concentrate in the warm season and install sustained humidity.
The vine finds its rhythm sheltered by a particularly dense canopy that filters light and holds moisture at ground level. This thermal steadiness spares it the jolts of marked seasons and lets it grow at a slow pace, in depth rather than volume.
It is this climate that gives the pod its full flesh, rich in essential oils and densely seeded. The natural oil and the generous seeds that sign V. Mille Tantely owe first to this terroir, before maturation comes to extend them.
The expression
The aromatic beam of V. Mille Tantely opens on floral, aniseed and fruity aromas.
The finish unfolds on naturally sweet notes, with excellent length on the palate.

The maturation craft
Like all ANTOKALY vanillas, V. Mille Tantely enters Malagasy rosewood chests after preparation. The wood breathes with the pod, regulates humidity and lets the essential oils find their melt.
It leaves the chest when aromatic maturity has found its full length.
In the kitchen
A vanilla for infused creams, crèmes brûlées, white chocolate ganaches and dairy desserts where one seeks an enveloping floral presence and a fine aromatic reading.
It also accompanies delicate entremets, fine pastries and refined desserts that call for a readable, long and generous vanilla. Its visible, abundant seeds make it a signature vanilla for preparations where vanilla takes the leading role.

This is one of our rarest lots. Some of our members reserve it for traditional rituals, where vanilla keeps a role that predates culinary use. What we can let you discover, in some years, amounts to only a few kilograms.
